Cal\u00e7otada<\/strong> is much more than a simple meal, it is a celebration of tradition, gastronomy and coexistence. Originally from Catalonia, this winter festival takes place between January and March and attracts locals and visitors alike. <\/p>\n<\/p>\n

The undisputed protagonist of a cal\u00e7otada are the cal\u00e7ots<\/strong>, a variety of spring onion that is grown especially for this event. The ritual begins with the preparation of cal\u00e7ots on the grill, where they are roasted until the skin is charred. Then, they are served on terracotta tiles and accompanied by the famous romesco sauce,<\/strong> made with almonds, tomatoes, nyori and other secret ingredients that every cook guards with suspicion. <\/p>\n<\/p>\n
